vt cheese council 2005 vs 2020
in 2005 the vermont cheese council had 34 members.
26 farmstead producers (some of these also bought in milk)
18 made raw milk cheese
19 used cow milk
7 used goat milk
10 used sheep milk
1 used buffalo milk
2 were organic
in 2020 there are 56 members. 18 of the 34 are still making cheese. 10 still have farmstead operations….
